淮山黄鳝汤

主料:黄鳝

辅料:山药、香菇、香菜

调料:盐、味精、白糖、胡椒粉、料酒

烹制方法:

1、将黄鳝用面粉洗净去其黏液,锅中加水,调入料酒后放入鳝鱼段,焯烫片刻备用;

2、将山药切滚刀块,过水略焯后取出,过油炸至表面微黄取出备用;

3、锅中留底油,爆香葱姜后加入香菇、鳝鱼,加料酒,冲入适量开水,放入山药大火烧开后转小火炖5分钟,加盐、胡椒粉、白糖、味精调味,撒入香菜即可。
