腊八醋鱼

主料:草鱼

辅料:腊八醋

调料:盐、味精、白糖、老抽、胡椒粉、淀粉、啤酒

烹制方法:
1、将草鱼切片,加入胡椒粉、啤酒、蛋清、盐、淀粉拌匀上浆备用;
2、取一小碗,加入糖、醋、水、啤酒(2:2:1:1)调成糖醋汁,加入老抽、盐调匀,锅中水烧开后下入鱼片,小火汆30秒捞出,锅中加少许油,烧热后倒入糖醋汁,水淀粉勾芡,出锅淋在鱼片上,撒腊八蒜片即可。

特点:鲜嫩爽滑,酸甜适中。
