芥菜猪肝汤

主料:猪肝

辅料:芥菜、口蘑

调料:盐、味精、白糖、胡椒粉、料酒、醋、香油、水淀粉

烹制方法:
1、将切好的猪肝放入凉水中浸泡去除腥味,捞出后用纸吸去水分,加入料酒、胡椒粉、盐、蛋清糊搅拌均匀,水烧开后加入少许盐、料酒,将猪肝下入迅速焯烫捞出备用;
2、芥菜切碎过开水焯烫后过凉,锅中加适量清水,放入口蘑片,加盐、胡椒粉、白糖调味,放入焯好的芥菜碎,水淀粉勾薄芡,放入猪肝后关火淋入香油、醋即可。
