蟹黄包

主料:面粉

辅料:鸡蛋、五花肉、蟹肉棒、蟹黄、葱姜、木耳

调料:盐、味精、料酒、红糖、淀粉、香油、醋、醪糟

烹制方法:

1、将螃蟹拆开取出蟹黄,加料酒、盐、姜末,用油炒熟,鸡蛋打散后加入同样体积的水,和少许料酒、醋、姜末;

2、坐锅点火倒油,下入蟹黄炒散后倒入鸡蛋液,加少许红糖、蟹肉棒碎、木耳碎,调入味精、盐制成蟹黄馅备用;

3、将炒好的蟹黄馅晾凉,加入五花肉馅、香油、葱姜末搅拌均匀,面粉用醪糟做面肥和成发面,擀皮包入蟹黄馅,大火蒸15分钟即可。

特点:皮薄馅大,汁鲜味香。
